Ingredients

  • 1 lb ground beef
  • 1 bag nacho cheese Doritos
  • 2 cups shredded cheddar cheese
  • 1 packet taco seasoning
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 small onion, diced
  • 1 can diced tomatoes with green chilies
  • 1 tbsp olive oil

Equipment

  • large skillet
  • 9x13-inch baking dish
  • mixing bowl
  • mixing spoon
  • oven

Method

  1. Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened.
  3. Add the ground beef and cook until browned, breaking the meat apart while cooking. Drain excess grease if needed.
  4. Stir in the taco seasoning and diced tomatoes with green chilies. Cook for 2 minutes until slightly thickened.
  5. In a large bowl, combine the sour cream, cream of chicken soup, and 1 cup of shredded cheddar cheese until smooth.
  6. Fold the beef mixture into the creamy mixture until evenly combined.
  7. Spread a layer of crushed Doritos across the bottom of the prepared baking dish.
  8. Add half of the beef mixture over the Doritos and sprinkle with some cheddar cheese.
  9. Repeat the layers once more and finish with extra cheese and a small handful of crushed Doritos on top.
  10. Bake uncovered for 20 to 25 minutes until the casserole is bubbling and the cheese is melted and golden.
  11. Let the casserole rest for 5 minutes before serving warm.

Notes

For the crispiest topping, add some crushed Doritos only to the top layer right before baking. Drain excess grease from the beef to prevent soggy layers. You can substitute shredded chicken for ground beef or use Cool Ranch Doritos for a different flavor twist. Let the casserole rest for 5 minutes before serving.
