- Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened.
- Add the ground beef and cook until browned, breaking the meat apart while cooking. Drain excess grease if needed.
- Stir in the taco seasoning and diced tomatoes with green chilies. Cook for 2 minutes until slightly thickened.
- In a large bowl, combine the sour cream, cream of chicken soup, and 1 cup of shredded cheddar cheese until smooth.
- Fold the beef mixture into the creamy mixture until evenly combined.
- Spread a layer of crushed Doritos across the bottom of the prepared baking dish.
- Add half of the beef mixture over the Doritos and sprinkle with some cheddar cheese.
- Repeat the layers once more and finish with extra cheese and a small handful of crushed Doritos on top.
- Bake uncovered for 20 to 25 minutes until the casserole is bubbling and the cheese is melted and golden.
- Let the casserole rest for 5 minutes before serving warm.
